Making Witch Finger Cookies




I've seen this one posted on Pinterest so many times. But these are the best instructions I've found. It took a couple of tries to get the right thickness and look.

I used store bought sugar cookie dough, added 1 cup of flour (you can use less or add a little at a time), then knead. If the cookie dough gets too dry, add 1/2 tsp of water (or enough to make it pliable). You don't want to put too much water unless it gets mushy.

After that, roll dough into a ball, then into a long coil. This helps make two/three fingers at a time. If the dough continues to fall apart, dip your fingers in some water, roll the coil into a ball again, and then roll into a coil. Think of it as working with clay. If it gets a little dry, just add some water. Press dough to flatten slightly if that is the desired look. Score with a knife, place the almond slices at the tip and press in place. Bake according to instructions.

I made seven different sizes/thickness to test out. Then from there, I chose which size/thickness I'd use. I really liked how they turned out. Let the cookies cool down before dusting/contouring with cocoa powder.

Pumpkin Pie Bites

For Christmas, I made these mini pumpkin pie bites from a recipe I found on Bakerella . I added a dollip of cool whip and a sprinkle of cinnamon to finish. Mmmm! I don't know about you, but this past year I was pumpkin pied out! It was an overload of pumpkinesque desserts: pumpkin bread, pumpkin cake, pumpkin pie, pumpkin spice rolls. No more pumpkin till next year.

I also made an apple pie (not pictured). It turned out way too lemony! I was so proud of the first one I made for Thanksgiving. It was perfect: the crust was crisp, flakey, sugary & buttery, the apples soft and filling tastey! Here I thought it would be perfect for Christmas eve dinner at the in laws. I was so stoked to show off my baking skills. But the pie turned out too lemony! Only my husband and mother-in-law ate from it. I ended throwing it away. I guess I got over zealous.

First Birthday Cake

I thought I'd try my hand at using fondant. Never used the stuff before. Watching a marathon of Cake Boss & Ace of Cakes motivated my husband & I try our hand at making bambinos first birthday cake.

My husband took the plunge first. He attempted to make an ABC block cake for the little guy. It didn't turn out that great. The fondant was thick and heavy and weighed the cake down. But I have to give him an A for effort. He was so stoked and I was surprised he was in the kitchen cooking instead of eating. :P He took the time to make the marshmellow fondant and buttercream from scratch! Wish I would of taken a picture of it.

Instead I took the easy route. We had purchased Wilton fondant from Joanne's earlier in the week ($25 BUCKS!) and regualr frosting. Hey, I was on a time crunch. It was so easy to roll out and it did not crack. It took me an hour and half to complete with the help of hubby. The fondant didn't taste that great. Good for decorating, not that tastey for eating.
